Orange butter
The simple addition of finely grated orange zest makes butter an aromatic lubricant or sauce; for example, melted orange butter tastes great with asparagus or broccoli (puree).
Ingredients
- 150 g butter, soft
- 1 unwaxed orange, finely grated zest
- pinch of salt
Method
- Mix butter and orange zest, season to taste, chill.
Variations
Other citrus peel varieties, such as lemon, lime, satsuma, grapefruit, all work well.
