Pea and quark gratin
These little gratins taste good warm and cold.
Ingredients
- 500 g peas (fresh or frozen)
- 450 g quark
- 1 egg
- 2 spring onions, chopped
- grated zest of ½ lemon
- 1 tbsp fresh thyme leaves
- 50 g grated Parmesan
- salt, white pepper, ground nutmeg
Method
- Grease 6 ramekins with soft butter, set aside. Boil peas in salted water, strain well. Preheat oven to 170 °C. Mix well all other ingredients, season to taste, add peas. Divide mixture into ramekins (or oven-proof cups) and bake for 20 to 30 minutes.
