Pea mousse
Peas are incredibly versatile and are a great ingredient also for a number of sweet dishes.
Ingredients
- 200 g peas (fresh or frozen)
- 100 ml water
- 1 unwaxed lemon, zest in strips
- 125 g white chocolate, finely chopped
- 1 tsp vanilla bean paste (or extract, or seeds of 1 vanilla pod)
- 150 ml whipping cream, whipped
Method
- In a saucepan bring water to the boil, add peas and lemon zest and cook until peas are very soft. Remove from heat, remove strips of lemon zest and blend to a smooth consistency, pass through a fine-meshed sieve. Return to a clean saucepan and heat gently but do not boil. Add white chocolate and vanilla, keep stirring until chocolate has melted into the puree. Remove from heat, set aside to cool, stirring occasionally. When completely cooled, fold in stiffly whipped cream, refrigerate for several hours before serving.
