Peach - onion sauce
This combination sounds a little strange but it is a very good, fresh-tasting summer sauce for all kinds of fish preparations, including fish cakes, any poached white fish, smoked mackerel – and no cooking involved!
Ingredients
- 2 ripe peaches, peeled, stoned and chopped (yellow or white peaches, or nectarines)
- 1 small white onion, finely chopped
- handful of fresh coriander leaves (or basil, if preferred)
- salt, white pepper to taste
Method
- Blend peaches, onion and coriander leaves to a smooth consistency, pass mixture through a fine-meshed sieve. Adjust thickness (with water or peach juice) as preferred, season to taste. Serve chilled.
