Peach - onion sauce

This combination sounds a little strange but it is a very good, fresh-tasting summer sauce for all kinds of fish preparations, including fish cakes, any poached white fish, smoked mackerel – and no cooking involved!

  1. Blend peaches, onion and coriander leaves to a smooth consistency, pass mixture through a fine-meshed sieve. Adjust thickness (with water or peach juice) as preferred, season to taste. Serve chilled.
