Peanut sauce
A useful flavour addition to the menu, a versatile sauce for many vegetable purees. Best prepared a day ahead.
Ingredients
- 100 ml coconut milk (unsweetened)
- 2 tbsp soy sauce
- 2 tbsp smooth peanut butter
- finely grated zest of 1 unwaxed lime
- 2 slices fresh ginger
Method
- Mix coconut milk, soy sauce, peanut butter and lime zest. Adjust thickness as preferred and add ginger to infuse. Refrigerate for several hours or overnight before serving.
