Pear – ricotta bake
Ingredients
- 400 g ricotta
- 3 egg yolks
- 1 tsp vanilla paste
- pinch of salt
- 1 unwaxed lemon (or lime), finely grated zest
- 300 g ripe pears, peeled, cored and chopped
- 2 tbsp lemon juice
- 1 tbsp milk
- 4 tbsp runny honey
- knob of butter
Method
- Grease a flat ovenproof dish with butter, set aside. Preheat oven to 180 °C.
- In a bowl, mix ricotta, 2 egg yolks, vanilla paste, salt and lemon zest. Mix prepared pears with lemon juice. Fold pears into ricotta mixture, transfer into baking dish. Lightly beat one egg yolk with milk, brush surface of ricotta mixture with egg/milk mixture. Bake for 60 minutes, remove from heat and drizzle with honey.
