Pears poached in red wine

Serve with whipped cream.

  1. Peel and core the pears, cut into quarters. Heat all other ingredients in a saucepan, add pear quarters and simmer until soft. Remove pear pieces and place in a bowl. Turn up heat and cook wine uncovered until much reduced to almost syrup consistency (all alcohol will have evaporated by that stage…). Spoon syrup over pears and refrigerate before serving.
