Polenta dumplings
Polenta made from wheat that is typically used to make pasta gives a nice texture to polenta dumplings and these dumplings soak up all kinds of sauces and purees rather well.
Ingredients
- 250 ml milk
- 60 g butter
- 80 g polenta (made from durum wheat)
- 2 eggs
- pinch of ground nutmeg
- salt, pepper
Method
- In a saucepan bring milk to the boil, add the butter and melt it in the milk, then add the polenta while stirring constantly. Cook mixture until very thick (attention – burns easily), remove from heat and transfer to a bowl. Add eggs and seasoning, mix well, set aside for 10 minutes.
- In a large saucepan bring salted water to the boil. Form small dumplings from the polenta mixture and add to the boiling water, lower heat and simmer for 5 to 10 minutes. The dumplings will raise to the surface when cooked.
