Prune and red wine sauce
Ingredients
- 250 g soft prunes, chopped
- 500 ml aromatic red wine
- 1 onion, finely chopped
- generous knob of butter
- salt and white pepper to taste
- [optional: cream or crème fraiche]
Method
- In a saucepan gently heat wine until lukewarm, add chopped prunes and set aside to soak prunes. In another saucepan melt the butter, add chopped onion and sweat until soft. Add wine / prune mixture, blend until smooth, pass through a fine-meshed sieve, season to taste. Adjust thickness according to preference. If preferred, add cream or crème fraiche before serving.
