Pumpkin, apple and feta sauce
Ingredients
- 400 g pumpkin flesh, chopped
- 2 apples, peeled, cored and finely chopped
- 5 tbsp oil
- 200 g Greek feta cheese, broken into small pieces
- pinch of salt
- pinch of cinnamon
- 1 tsp runny honey
- 1 tbsp lemon juice
- [if wanted: small pinch of chili powder]
Method
- Heat oil in saucepan, add chopped pumpkin and apple, add spritz of lemon juice, salt, honey, cinnamon, cook over low heat for 10 minutes. Add water to cover, cook for another 10 to 15 minutes until pumpkin pieces are very soft. Remove from heat, add feta pieces, blend to a smooth consistency, pass through a fine-meshed sieve. Adjust thickness as wanted, season to taste.
