Red cabbage soup
Ingredients
- 250 g red cabbage, prepared and shredded
- 200 g apple, peeled, cored and chopped
- 1 garlic clove, peeled and chopped
- 1 medium potato, peeled and chopped
- 500 ml water
- 2-3 bay leaves
- 2-3 cloves
- salt, honey
Method
- In a saucepan add cabbage, apples, potato, bay leaves and cloves to 500 ml water, bring to the boil, reduce heat slightly and simmer until cabbage and potato are soft, about 20 to 30 minutes. Remove from the heat, remove bay leaves and cloves, blend until smooth, pass through a fine-meshed sieve. Adjust thickness as preferred, season with salt and a little honey, to taste.
