Rocket yogurt dip
A useful and tasty savoury lubricant for all occasions. Also a good test case: it can be made into a spicy version by the addition of a little bit of lemon juice and/or some chili flakes. Alternatively, it can be used to try how well ‘bits’ in food can be managed by adding some extra, finely shredded rocket to the sauce (and if it doesn’t work with the bits, all it takes is a quick second round of blending for a smooth and homogeneous consistency).
Ingredients
- 50 g rocket, washed and shredded
- 1 garlic clove, finely chopped
- 250 g quark (or ricotta)
- 150 g Greek yogurt
- 1 tbsp olive oil
- salt, white pepper
Method
- Combine all ingredients, blend to a smooth consistency, season to taste, adjust thickness as preferred.
