Salmon flan
Ingredients
- 350 g salmon fillet, chilled, cubed
- 100 ml cream, chilled
- 1 egg
- 1 tbsp lemon juice
- soy sauce
- knob of butter for greasing four ramekins
Method
- Preheat oven to 180 °C. Grease four ramekins with soft butter, set aside.
- Blend salmon cubes, cream, egg and lemon juice to a smooth puree. Season with soy sauce. Divide mixture into four ramekins, filling each to maximal three quarters. Place ramekins in a roasting tin, add hot water to the roasting tin up to ca. two thirds of the height of the ramekins. Bake for 30 to 40 minutes.
