Smoked trout sauce
A smooth and gentle fish taste to accompany vegetables / vegetable purees; particularly nice with green asparagus, but also a good lubricant for boiled potatoes. Quick and easy to prepare, no cooking.
Ingredients
- 5 tbsp good quality mayonnaise (best homemade)
- 2 tbsp Greek yogurt
- spritz of lemon juice
- 3 tbsp white wine (or vermouth)
- 2 anchovy fillets, rinsed and drained, chopped
- 100 g smoked trout filet, roughly chopped
Method
- Combine all ingredients, blend to a smooth consistency. Serve immediately.
