Spinach - avocado flan
Ingredients
- 250 g spinach
- 1 shallot, finely chopped
- knob of butter
- 1 garlic clove, finely chopped
- 1 ripe avocado, prepared
- 1 egg, lightly beaten
- 100 ml cream
- pinch of ground nutmeg
- salt, white pepper
Method
- Generously butter a flat oven-proof dish, set aside. Preheat oven to 200°C. Melt butter in a large saucepan, add shallot and sweat until softened. Add washed spinach and wilt it. Drain well when cooked, then chop very finely. Blend prepared avocado, garlic and spinach to a smooth puree, add nutmeg. Season to taste and transfer to prepared baking dish. Mix beaten egg and cream, pour over avocado / spinach puree, bake for 30 minutes. Let sit for a few minutes before serving.
