Star anis mousse

Serve with mashed banana (perhaps with a little drizzle of rum, for flavour) – great combination.

  1. In a small saucepan, sprinkle gelatin over a little water, set aside to soak.
  2. In a saucepan, bring milk and star anis to the boil, add sugar and vanilla paste. Remove from heat, remove star anis wheels. Dissolve gelatin, add to the hot milk mixture, while stirring. Set aside, when completely cooled, whisk cream cheese and yogurt with the milk mixture until a smooth creamy consistency is obtained. Fold in whipped egg whites. Refrigerate for several hours (or overnight) until set.
