Strawberry buttermilk mousse
Make some extra fruit puree and serve with the mousse (or use surplus to make a smoothie or milkshake).
Ingredients
- 1 sachet powdered gelatin
- 200 g strawberries, prepared and chopped
- 1 tbsp runny honey
- 250 ml buttermilk
- 50 g caster (or icing) sugar
- 1 unwaxed lemon, finely grated zest
- 1 tbsp lemon juice
- 250 ml whipping cream, whipped
Method
- In a small saucepan, sprinkle gelatin over a little water, set aside to soak.
- Combine strawberries and honey, blend to a puree. Add buttermilk, sugar and lemon zest, blend again. Pass through a fine-meshed sieve. Dissolve gelatin, slowly add to the strawberry / buttermilk mixture while constantly stirring. Fold in whipped cream, mix well. Refrigerate for several hours (or overnight) until set.

This works well with many different fruit purees such as peaches, apricots, blackberries, raspberries, blueberries, melon, avocado.
