Swede soup

When prepared with less chicken stock and omitting the cream, this can also be used as a swede puree or a thick swede sauce.

  1. In a saucepan, bring stock, swedes, carrots and bacon to the boil. Reduce heat and simmer for 30 minutes until vegetables are soft. Remove from heat, remove bacon slices. Blend mixture to a smooth consistency, add cream. Adjust thickness as preferred and season to taste. Serve with a drizzle of pumpkin seed oil for extra flavour.
