Swede soup
When prepared with less chicken stock and omitting the cream, this can also be used as a swede puree or a thick swede sauce.
Ingredients
- 750 g swedes, prepared and chopped
- 250 g carrots, prepared and chopped
- 1200 ml chicken stock
- 100 g smoked bacon, thick slice(s)
- 100 ml cream
- pinch of ground nutmeg
- salt, white pepper
- pumpkin seed oil, to serve
Method
- In a saucepan, bring stock, swedes, carrots and bacon to the boil. Reduce heat and simmer for 30 minutes until vegetables are soft. Remove from heat, remove bacon slices. Blend mixture to a smooth consistency, add cream. Adjust thickness as preferred and season to taste. Serve with a drizzle of pumpkin seed oil for extra flavour.
