Sweet potato – pork patties
Ingredients
- 250 g sweet potatoes, peeled and chopped (or 250 g sweet potato puree)
- 500 g pork mince
- 1 apple, peeled, cored, grated
- 1 shallot, finely chopped
- 1 garlic clove, finely chopped
- 1 tbsp fresh coriander leave, finely shredded
- pinch of ground cumin
- 1 tsp dried oregano
- 1 tbsp dried thyme
- 1 tbsp sweet paprika
- salt, white pepper
- rapeseed oil
Method
- In a saucepan, bring salted water to the boil, add sweet potato and cook for 15 to 20 minutes, until soft. Remove from the heat, drain, blend to a puree, set aside.
- In a bowl, mix minced pork, sweet potato puree, grated apple, onion and garlic, mix well. Add all spices and coriander, mix well again. Refrigerate for about an hour.
- Heat some rapeseed oil in a large frying pan over moderate heat. Form small patties, cook for 5 minutes on each side.
