Sweet potato – pork patties

  1. In a saucepan, bring salted water to the boil, add sweet potato and cook for 15 to 20 minutes, until soft. Remove from the heat, drain, blend to a puree, set aside.
  2. In a bowl, mix minced pork, sweet potato puree, grated apple, onion and garlic, mix well. Add all spices and coriander, mix well again. Refrigerate for about an hour.
  3. Heat some rapeseed oil in a large frying pan over moderate heat. Form small patties, cook for 5 minutes on each side.
