Sweet potato – prune puree
If a completely smooth texture is preferred, blend all ingredients to a smooth consistency as described below. If a soft consistency with some texture is preferred, just mash the cooked sweet potatoes and add the finely chopped prunes and coriander to the mash.
Ingredients
- 300 g shallots, finely chopped
- small knob of ginger, finely grated
- generous knob of butter
- salt, white pepper
- 1 kg sweet potatoes, peeled and chopped
- 100 g soft prunes, chopped
- handful of fresh coriander, shredded
Method
- In a saucepan, bring salted water to the boil, add sweet potato. Bring to the boil, cover and cook for about 20 minutes until soft. Drain, set aside. In a saucepan, melt butter over moderate heat, add shallot and sweat until softened. Add sweet potato, prunes and coriander, mix well. Remove from heat, blend to a smooth consistency, season to taste.
