Sweet potato and peanut soup
Ingredients
- 700 g sweet potato, peeled and diced
- 2 stalks celery, prepared and chopped
- 1 large onion, finely chopped
- 1 garlic clove, finely chopped
- 3 tbsp smooth peanut butter
- 200 ml coconut milk
- 900 ml chicken stock
- handful of fresh coriander leaves, chopped
- salt, white pepper
- 3 tbsp soy sauce
- spritz of lime juice
Method
- In a saucepan, heat some oil and gently cook onion and garlic until starting to soften. Add celery and sweet potato, sweat for a few more minutes. Add peanut butter, coconut milk and chicken stock. Bring to the boil, reduce heat and simmer for 30 minutes. Remove from heat, add coriander leaves. Blend to a smooth consistency, pass through a fine-meshed sieve. Adjust thickness as preferred, add soy sauce and a little lime juice, season to taste.
Variations
If the mixture is kept fairly thick, it also works well as a sauce or puree.
