Sweet potato - banana puree
Ingredients
- 100 g onion, finely chopped
- 2 tbsp olive oil
- 500 g sweet potatoes, peeled and chopped
- 400 ml coconut milk
- 1 tsp salt
- 1 tsp ground turmeric
- 1 tsp ground cinnamon
- 1 tbsp runny honey
- finely grated zest of ½ lime (or lemon)
- spritz of lime (or lemon) juice
- 100 g banana, peeled and sliced
- handful of flat-leaf parsley, chopped
Method
- In a saucepan heat oil, add chopped onion and sweet potato; sweat for a few minutes. Add coconut milk and all spices, lime zest and juice, reduce heat and simmer for 15 minutes (until sweet potato chunks are very soft). Remove from the heat, add parsley leaves and blend to a smooth puree, pass through a fine-meshed sieve. Add banana slices before serving.
Variations
If a perfectly smooth consistency is preferred, add the banana slices before blending the mixture.
