Vanilla parfait
Good as a side dish with many other foods. On its own – serve drizzled with good quality pumpkin seed oil, delicious. Only use fresh eggs for this recipe.
Ingredients
- 3 eggs, separated
- pinch of salt
- 75 g caster sugar (or icing sugar)
- 1 vanilla pod, split and seeds scraped out
- 250 ml whipped cream
Method
- Line loaf tin with cling film.
- Whip egg white with a pinch of salt, add icing (or caster) sugar, keep whipping until egg white is smooth and glossy. Add egg yolks and vanilla seeds, mix. Add whipped cream, mix well. Transfer into lined loaf tin, cover with cling film and freeze overnight. Remove from freezer and move to refrigerator about 30 minutes before serving.
