  1. In a saucepan, melt butter over moderate heat. Add onion and garlic, sweat until slightly softened. Add sherry, boil to reduce liquid to half. Add stock and cream, add beans. Cook over moderate heat for 30 minutes. Remove from heat, blend to a smooth consistency, pass through a fine-meshed sieve, adjust thickness as preferred, season to taste.
