White bean soup
Ingredients
- 1 large white onion, chopped
- 1 garlic clove, finely chopped
- generous knob of butter
- 1 tin of small white (cannellini) beans, 200 g after draining
- 50 ml dry sherry
- 750 ml chicken stock
- 100 ml cream
- pinch of sugar
- salt, white pepper
Method
- In a saucepan, melt butter over moderate heat. Add onion and garlic, sweat until slightly softened. Add sherry, boil to reduce liquid to half. Add stock and cream, add beans. Cook over moderate heat for 30 minutes. Remove from heat, blend to a smooth consistency, pass through a fine-meshed sieve, adjust thickness as preferred, season to taste.
