White chocolate flan
Ingredients
- 350 ml whole milk
- 150 ml double cream
- 2 tbsp caster sugar
- 1 vanilla pod, split and scraped
- 200 g white chocolate, broken into small pieces
- 4 egg yolks
- 2 eggs, slightly beaten
Method
- Preheat oven to 160 °C. In a saucepan bring milk, cream, sugar and vanilla to the boil, remove from heat. Add white chocolate while stirring until molten. Add yolks and eggs while stirring. Strain through a fine sieve and divide into small ramekins. Cover each with aluminium foil. Place ramekins in a roasting tin and add hot water to the roasting tin, about 2/3 of height of ramekins. Bake for 25 to 30 minutes. Serve lukewarm or cold (store in refrigerator).
