  1. Melt butter in saucepan, add sugar, then chopped onion. Sweat for a few minutes. Add wine and reduce liquid. Add chicken stock, ginger and bay leaves, simmer for 30 to 45 minutes until onions are very soft. Remove bay leaves and ginger, add cream and soft butter, puree the mixture. Pass through a sieve, adjust thickness and season to taste.
