Wild garlic sauce

  1. Melt butter in saucepan, add flour and stir well for a few minutes. Remove saucepan briefly from heat and add all liquids (stock, wine and cream) at once. Put back on stove and bring to the boil while whisking all the time. Reduce heat and simmer for 10 minutes while stirring occasionally. Add chopped wild garlic leaves, remove from heat and blend to a smooth sauce, pass through fine-meshes sieve, season to taste. Serve hot, lukewarm or cold.
